Smoked Potatoes

Baby potatoes smoked until creamy inside, tossed with olive oil and herbs.

Ingredients

  • 2 lb baby potatoes, halved
  • 3 tablespoons olive oil
  • 1 tablespoon BBQ dry rub
  • 1 teaspoon salt
  • 2 tablespoons chopped parsley
  • 3 cloves garlic, minced

Steps

  1. Step 1. Toss the potatoes with the oil, rub, and salt.

  2. Step 2. Heat the smoker to 250°F. Spread the potatoes in a cast-iron pan or on a rack.

  3. Step 3. Smoke for 75 to 90 minutes, stirring once, until tender and golden.

  4. Step 4. Toss with the parsley and garlic.
