Feijão Carioca

Everyday Brazilian pinto beans simmered with garlic, onion, and bay leaf.

Ingredients

  • 1 lb dried carioca or pinto beans, soaked overnight
  • 8 cups water
  • 2 bay leaves
  • 2 tablespoons oil
  • 1 onion, diced
  • 5 cloves garlic, minced
  • 2 slices bacon, diced
  • 1 1/2 teaspoons salt
  • 2 tablespoons chopped parsley

Steps

  1. Step 1. Boil the soaked beans in the water with the bay leaves, covered, for 45 to 60 minutes until tender.

  2. Step 2. Cook the bacon in the oil for 4 minutes. Add the onion and garlic for 4 minutes.

  3. Step 3. Stir the mix into the beans with the salt.

  4. Step 4. Simmer for 15 minutes, mashing some beans to thicken the broth. Top with parsley.
