Sopa de Ajo

Castilian garlic soup with bread, paprika, and a poached egg.

Ingredients

  • 1/4 cup olive oil
  • 8 cloves garlic, sliced
  • 4 slices stale bread, cut in pieces
  • 1 tablespoon smoked paprika
  • 6 cups chicken or vegetable stock
  • 1 teaspoon salt
  • 4 eggs
  • 2 tablespoons chopped parsley

Steps

  1. Step 1. Cook the garlic in the oil for 2 minutes until golden. Add the bread and fry for 3 minutes.

  2. Step 2. Stir in the paprika for 10 seconds, then add the stock and salt right away.

  3. Step 3. Simmer for 20 minutes until the bread breaks down.

  4. Step 4. Crack in the eggs, cover, and poach for 3 to 4 minutes until the whites are set. Top with parsley.
