Steak Frites
Pan-seared steak with a butter and herb topping, served with crisp French fries.

Ingredients
- 2 steaks (8 oz each), such as sirloin or ribeye
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons oil
- 2 tablespoons butter
- 2 cloves garlic, smashed
- 3 sprigs thyme
- 1 lb russet potatoes, cut in thin sticks
- 3 cups oil for frying
- 1 tablespoon chopped parsley
Steps
Step 1. Soak the potato sticks in cold water for 30 minutes, then dry very well.
Step 2. Heat the oil to 325°F and fry the potatoes in batches for 4 minutes until soft but pale. Drain. Raise the oil to 375°F and fry again for 3 minutes until golden. Salt right away.
Step 3. Pat the steaks dry and season. Sear in the 2 tablespoons of oil over high heat for 3 to 4 minutes per side.
Step 4. Add the butter, garlic, and thyme and baste for 1 minute. Cook to 130°F for medium-rare or 145°F for medium. Rest 5 minutes.
Step 5. Slice and serve with the fries and parsley.
