Skewered grilled chicken basted in a sweet soy glaze, with charred scallion pieces.

Ingredients

  • 1.5 lb boneless chicken thighs, cut in 1-inch pieces
  • 6 green onions, cut in 1-inch pieces
  • 1/3 cup soy sauce
  • 1/3 cup mirin
  • 2 tablespoons sake
  • 2 tablespoons sugar
  • 12 bamboo skewers, soaked

Steps

  1. Step 1. Simmer the soy sauce, mirin, sake, and sugar for 8 minutes until slightly thick. Cool.

  2. Step 2. Thread the chicken and green onion pieces alternately on the skewers.

  3. Step 3. Grill over medium-high heat for 8 to 10 minutes, turning and brushing with the glaze every 2 minutes.

  4. Step 4. Cook until the chicken is cooked through (165°F) and lightly charred.
