Ingredients

  • 1 lb pork shoulder, sliced thin
  • 2 tablespoons fish sauce
  • 2 tablespoons sugar
  • 2 stalks lemongrass, minced
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 4 small baguettes
  • 1/4 cup mayonnaise
  • 1 teaspoon sriracha
  • 1 cucumber, sliced in spears
  • 1 cup pickled carrot and daikon
  • 1/2 cup cilantro sprigs
  • 2 jalapeños, sliced

Steps

  1. Step 1. Mix the fish sauce, sugar, lemongrass, garlic, and oil. Toss with the pork and marinate for at least 30 minutes.

  2. Step 2. Grill or pan-sear the pork over high heat for 2 to 3 minutes per side, until browned and cooked through with no pink inside.

  3. Step 3. Stir the mayonnaise and sriracha together.

  4. Step 4. Split the baguettes and toast them. Spread with the chili mayo.

  5. Step 5. Fill with the pork, cucumber, pickles, cilantro, and jalapeño.
