Mi Xao Bo (Beef Stir-Fried Noodles)

Egg noodles stir-fried with beef, broccoli, and a sweet garlicky sauce.

Ingredients
- 8 oz egg noodles
- 1 lb flank steak, sliced thin
- 2 tablespoons soy sauce, divided
- 3 tablespoons vegetable oil, divided
- 4 cloves garlic, minced
- 2 cups broccoli florets
- 1 carrot, sliced
- 2 tablespoons oyster sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
Steps
Step 1. Boil the noodles until just tender, drain, and toss with a little oil. Marinate the beef in 1 tablespoon of soy sauce for 10 minutes.
Step 2. Heat 1 tablespoon of oil in a wok over high heat. Sear the beef for 2 minutes until browned and cooked through. Remove.
Step 3. Add the remaining oil, garlic, broccoli, and carrot and stir-fry for 3 minutes.
Step 4. Add the noodles, oyster sauce, remaining soy sauce, and sugar. Toss 2 minutes. Return the beef, add the sesame oil, and serve.
