Bo Luc Lac (Shaking Beef)

Ingredients

  • 1.5 lb beef sirloin, cut in 1-inch cubes
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sugar
  • 4 cloves garlic, minced
  • 1 teaspoon black pepper
  • 3 tablespoons vegetable oil, divided
  • 1 red onion, cut in wedges
  • 2 cups watercress or lettuce
  • 2 tomatoes, sliced
  • 2 tablespoons lime juice
  • 1 teaspoon salt

Steps

  1. Step 1. Marinate the beef in the soy sauce, oyster sauce, sugar, half the garlic, and the pepper for 20 minutes.

  2. Step 2. Heat 2 tablespoons of oil in a wok until smoking. Sear half the beef for about 2 minutes, shaking the pan, until browned and no longer pink on the outside (145°F inside for medium). Repeat.

  3. Step 3. Add the rest of the oil, the onion, and remaining garlic and stir for 1 minute. Return the beef.

  4. Step 4. Arrange the watercress and tomatoes on a plate and top with the beef. Mix the lime juice, salt, and extra pepper for dipping.
