The national soup of Greece: white beans, carrot, celery, and tomato in good olive oil.

Ingredients

  • 1 lb dried white beans, soaked overnight
  • 1/3 cup olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 can (14 oz) diced tomatoes
  • 2 bay leaves
  • 8 cups water
  • 1 1/2 teaspoons salt
  • 1/4 cup chopped parsley

Steps

  1. Step 1. Boil the soaked beans in fresh water for 20 minutes and drain.

  2. Step 2. Cook the onion, carrots, and celery in the oil for 8 minutes. Add the garlic and tomato paste for 2 minutes.

  3. Step 3. Add the beans, tomatoes, bay leaves, and the 8 cups of water. Simmer for 60 minutes until the beans are creamy.

  4. Step 4. Add the salt for the last 15 minutes. Top with parsley and extra olive oil.
