Giant white beans baked in a sweet tomato and herb sauce.

Ingredients

  • 1 lb dried giant white beans, soaked overnight
  • 1/3 cup olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 1 can (14 oz) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon oregano
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/4 cup chopped parsley
  • 1 cup water

Steps

  1. Step 1. Boil the soaked beans in fresh water for 40 minutes until almost tender. Drain.

  2. Step 2. Heat the oven to 350°F. Cook the onion, garlic, and carrots in the oil for 8 minutes. Add the tomato paste, tomatoes, oregano, bay leaf, salt, and water.

  3. Step 3. Stir in the beans and pour into a baking dish.

  4. Step 4. Bake for 45 to 50 minutes, uncovered, until the beans are tender and the sauce is thick. Top with parsley.
