Classic Hummus

Smooth, creamy chickpea and tahini dip with lemon and garlic.

Ingredients

  • 1 can (15 oz) chickpeas, drained, liquid saved
  • 1/4 cup tahini
  • 3 tablespoons lemon juice
  • 1 clove garlic
  • 3 tablespoons ice water
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 2 tablespoons olive oil, plus more to serve
  • Paprika, to serve

Steps

  1. Step 1. Blend the tahini and lemon juice for 1 minute until pale and thick.

  2. Step 2. Add the garlic, chickpeas, salt, and cumin. Blend for 2 minutes, adding the ice water until very smooth.

  3. Step 3. Taste and adjust the lemon and salt.

  4. Step 4. Spread in a bowl, make a well, and top with olive oil and paprika.
