Mandioca Frita
Crisp fried cassava sticks with a creamy, fluffy inside. Better than fries.

Ingredients
- 2 lb cassava (yuca), peeled
- 1 tablespoon salt, for the water
- 3 cups oil for frying
- 1/2 teaspoon salt
- Lime wedges, to serve
Steps
Step 1. Cut the cassava in 3-inch pieces, then into sticks. Remove the woody center core.
Step 2. Boil in the salted water for 15 to 20 minutes until just tender. Drain and dry very well.
Step 3. Heat the oil to 350°F. Fry in batches for 5 to 7 minutes until golden and crisp. Drain on a rack.
Step 4. Sprinkle with salt and serve with lime and dipping sauce.
