Farofa

Toasted cassava flour with butter, bacon, and onion. A crunchy topping for beans, meat, and rice.

Ingredients

  • 4 slices bacon, diced
  • 2 tablespoons butter
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 1 1/2 cups cassava flour (farinha de mandioca)
  • 2 eggs, beaten, optional
  • 1/2 teaspoon salt
  • 2 tablespoons chopped parsley

Steps

  1. Step 1. Cook the bacon in a large pan until crisp. Lift it out and keep 1 tablespoon of the fat.

  2. Step 2. Add the butter, onion, and garlic and cook for 3 minutes.

  3. Step 3. Add the eggs if using and scramble for 1 minute.

  4. Step 4. Stir in the cassava flour and cook over medium heat for 4 to 5 minutes until toasted and golden. Stir in the bacon, salt, and parsley.
