Frango à Passarinho

Crispy fried chicken pieces tossed with lots of garlic. A classic bar snack.

Ingredients

  • 3 lb chicken wings or drumettes, cut in pieces
  • 3 tablespoons lime juice
  • 1 teaspoon salt
  • 5 cloves garlic, minced
  • 1/2 cup flour
  • 3 cups oil for frying
  • 1/4 cup chopped parsley
  • Lime wedges, to serve

Steps

  1. Step 1. Toss the chicken with the lime juice, salt, and half the garlic. Marinate 1 hour.

  2. Step 2. Dust with the flour, shaking off the extra.

  3. Step 3. Heat the oil to 350°F. Fry in batches for 10 to 12 minutes until golden and cooked through (165°F).

  4. Step 4. Drain, then toss with the remaining garlic and parsley. Serve hot with lime.
