Boiled bitter greens dressed with olive oil and lemon. The everyday Greek side dish.

Ingredients

  • 2 lb dandelion greens, chard, or spinach, washed
  • 1 teaspoon salt, for the water
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Steps

  1. Step 1. Boil a large pot of salted water. Add the greens and cook for 5 to 8 minutes until tender.

  2. Step 2. Drain well, pressing out extra water.

  3. Step 3. Toss with the oil, lemon juice, salt, and pepper.

  4. Step 4. Serve warm or at room temperature.
