Greek Lemon Potatoes

Potatoes roasted in lemon juice, olive oil, garlic, and oregano until browned and creamy inside.

Ingredients

  • 3 lb Yukon Gold potatoes, cut in wedges
  • 1/3 cup olive oil
  • 1/3 cup lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken or vegetable stock

Steps

  1. Step 1. Heat the oven to 400°F. Toss the potatoes with the oil, lemon juice, garlic, oregano, salt, and pepper in a large roasting pan in a single layer.

  2. Step 2. Pour the stock around them.

  3. Step 3. Roast for 50 to 60 minutes, turning twice, until golden and the liquid has been absorbed.

  4. Step 4. Serve hot with extra lemon.
