Jeera Rice
Basmati rice with cumin seeds fried in ghee. A simple side for any curry.

Ingredients
- 1 1/2 cups basmati rice, rinsed
- 2 tablespoons ghee or oil
- 2 teaspoons cumin seeds
- 1 bay leaf
- 2 1/4 cups water
- 1 teaspoon salt
Steps
Step 1. Soak the rice in water for 20 minutes, then drain.
Step 2. Heat the ghee and fry the cumin seeds and bay leaf for 30 seconds until fragrant.
Step 3. Add the rice and stir for 1 minute. Add the water and salt and bring to a boil.
Step 4. Cover, reduce the heat to low, and cook 15 minutes. Rest 5 minutes, then fluff.
