Aloo Paratha
Whole wheat flatbreads stuffed with spiced mashed potato and fried with ghee.

Ingredients
- 2 cups whole wheat flour
- 3/4 cup water, plus more as needed
- 1 teaspoon salt, divided
- 2 large potatoes, boiled and mashed
- 1 green chili, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder
- 2 tablespoons chopped cilantro
- 4 tablespoons ghee or oil
- Yogurt and pickle, to serve
Steps
Step 1. Knead the flour, water, and 1/2 teaspoon of salt into a soft dough. Rest for 20 minutes.
Step 2. Mix the potato with the chili, cumin, coriander, chili powder, cilantro, and remaining salt.
Step 3. Divide the dough in 8 balls. Roll each into a 4-inch circle, add 2 tablespoons of filling, pinch the edges closed, and gently roll flat to 6 inches.
Step 4. Cook on a hot dry pan for 1 minute, flip, brush with ghee, cook until golden spots form, flip again and brush the other side.
Step 5. Serve hot with yogurt and pickle.
