Aloo Gobi

Potatoes and cauliflower cooked dry with turmeric, cumin, and ginger.

Ingredients

  • 3 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 onion, diced
  • 1 tablespoon grated ginger
  • 3 cloves garlic, minced
  • 1 teaspoon turmeric
  • 2 teaspoons ground coriander
  • 1 teaspoon chili powder
  • 2 potatoes, cut in 3/4-inch cubes
  • 1 small cauliflower, cut in florets
  • 1 tomato, chopped
  • 1 teaspoon salt
  • 1/2 cup water
  • 1 teaspoon garam masala
  • 2 tablespoons chopped cilantro

Steps

  1. Step 1. Heat the oil and add the cumin seeds until they sizzle. Add the onion and cook for 6 minutes.

  2. Step 2. Add the ginger, garlic, turmeric, coriander, and chili powder and stir for 1 minute.

  3. Step 3. Add the potatoes, cauliflower, tomato, salt, and water. Cover and cook on medium-low for 20 minutes, stirring now and then, until tender.

  4. Step 4. Uncover and cook 3 minutes until dry. Sprinkle with garam masala and cilantro.
