Okonomiyaki

A savory cabbage pancake topped with sauce, mayonnaise, bonito flakes, and seaweed.

Ingredients

  • 1 cup flour
  • 3/4 cup dashi stock or water
  • 3 eggs
  • 4 cups finely shredded cabbage
  • 1/4 cup sliced green onions
  • 4 slices bacon or thin pork, cut in pieces
  • 2 tablespoons oil
  • 3 tablespoons okonomiyaki sauce
  • 2 tablespoons Japanese mayonnaise
  • Bonito flakes and nori flakes, to top

Steps

  1. Step 1. Whisk the flour, dashi, and 1 egg into a batter. Fold in the cabbage, 2 eggs, and green onions.

  2. Step 2. Heat the oil in a pan. Pour in half the batter, shape into a thick round, and lay half the pork on top.

  3. Step 3. Cook over medium heat for 5 minutes, flip, and cook 5 minutes more until browned and the pork is cooked through and no longer pink.

  4. Step 4. Brush with sauce, drizzle with mayonnaise, and top with bonito flakes and nori.
