Oven-Fried Chicken

Crunchy, golden chicken made without a deep fryer, with a cornflake and panko crust.

Ingredients

  • 3 lb bone-in chicken pieces
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 2 cups cornflakes, crushed
  • 1 cup panko breadcrumbs
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1/4 cup melted butter

Steps

  1. Step 1. Soak the chicken in the buttermilk and salt for 1 hour or overnight.

  2. Step 2. Heat the oven to 425°F with a rack set over a sheet pan. Mix the cornflakes, panko, paprika, garlic powder, and pepper.

  3. Step 3. Coat each piece of chicken in the crumb mixture and set on the rack. Drizzle with the melted butter.

  4. Step 4. Bake for 40 to 50 minutes, until golden and cooked through (165°F).
