French Crêpes

Thin, tender pancakes for sweet or savory fillings. Use lemon and sugar, jam, or ham and cheese.

Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1 1/4 cups milk
  • 1/4 cup water
  • 2 tablespoons melted butter, plus more for the pan
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • Lemon and sugar, or jam, to serve

Steps

  1. Step 1. Blend the flour, eggs, milk, water, butter, sugar, and salt until smooth. Rest for 30 minutes.

  2. Step 2. Heat a nonstick pan over medium heat and brush lightly with butter.

  3. Step 3. Pour in about 1/4 cup of batter and tilt to coat. Cook for 1 to 1.5 minutes until the edges lift and the underside is golden.

  4. Step 4. Flip and cook for 30 seconds. Fill and fold. Stack the rest on a plate under a towel.
