Saganaki

Σαγανάκι

Pan-fried cheese with a golden crust, finished with a squeeze of lemon.

Ingredients

  • 8 oz kefalograviera, halloumi, or kasseri cheese, in 1/2-inch slabs
  • 2 tablespoons water
  • 1/4 cup flour
  • 2 tablespoons olive oil
  • 1 lemon, cut in wedges
  • Crusty bread, to serve

Steps

  1. Step 1. Dip the cheese slabs in water, then in the flour, shaking off the extra.

  2. Step 2. Heat the oil in a small pan over medium-high heat.

  3. Step 3. Fry the cheese for 1 to 2 minutes per side until golden and crisp.

  4. Step 4. Squeeze lemon over the top and serve right away with bread.
