Greek Salad (Horiatiki)
Χωριάτικη σαλάτα
A village salad of ripe tomatoes, cucumber, olives, and a slab of feta with olive oil and oregano. No lettuce.

Ingredients
- 4 ripe tomatoes, cut in wedges
- 1 cucumber, sliced thick
- 1/2 red onion, sliced thin
- 1 green bell pepper, sliced in rings
- 1/2 cup Kalamata olives
- 6 oz feta, in a slab
- 1/4 cup extra-virgin olive oil
- 1 teaspoon dried oregano
- 1 tablespoon red wine vinegar
- 1/2 teaspoon salt
Steps
Step 1. Put the tomatoes, cucumber, onion, pepper, and olives in a bowl.
Step 2. Sprinkle with the salt and toss.
Step 3. Top with the slab of feta. Drizzle with the oil and vinegar and sprinkle with the oregano.
Step 4. Serve with crusty bread to soak up the juices.
