Pain Perdu (French Toast)

Thick slices of day-old bread soaked in vanilla custard and fried in butter.

Ingredients

  • 8 thick slices day-old brioche or baguette
  • 3 eggs
  • 1 cup milk
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1 pinch salt
  • 2 tablespoons butter
  • Maple syrup and berries, to serve

Steps

  1. Step 1. Whisk the eggs, milk, sugar, vanilla, cinnamon, and salt in a shallow dish.

  2. Step 2. Soak each bread slice for about 30 seconds per side, until soaked but not falling apart.

  3. Step 3. Melt the butter in a large pan over medium heat. Cook the slices for 3 minutes per side, until golden and the egg is set (160°F).

  4. Step 4. Serve hot with syrup and berries.
