Sinigang na Baboy

A sour tamarind soup with pork ribs, tomato, radish, and greens. The Philippines' comfort soup.

Ingredients

  • 2 lb pork spare ribs, cut in pieces
  • 8 cups water
  • 1 onion, quartered
  • 2 tomatoes, quartered
  • 3 tablespoons tamarind paste, or 1 packet sinigang mix
  • 3 tablespoons fish sauce
  • 1 daikon radish, sliced
  • 1 cup long green beans, cut in 3-inch pieces
  • 1 eggplant, sliced
  • 2 cups spinach or water spinach
  • 2 long green chilies

Steps

  1. Step 1. Boil the pork in the water and skim the foam. Add the onion and tomatoes and simmer, covered, for 45 minutes until the pork is tender and cooked through.

  2. Step 2. Stir in the tamarind and fish sauce.

  3. Step 3. Add the radish, green beans, and eggplant and simmer for 10 minutes.

  4. Step 4. Add the chilies and spinach for 2 minutes. Taste and adjust the sourness. Serve with rice.
