Tinola

A light, gingery chicken soup with green papaya and chili leaves or spinach.

Ingredients

  • 2 tablespoons oil
  • 1 onion, sliced
  • 3 inch piece ginger, sliced into matchsticks
  • 4 cloves garlic, minced
  • 2 lb bone-in chicken pieces
  • 2 tablespoons fish sauce
  • 6 cups water
  • 1 small green papaya or chayote, peeled and cut in wedges
  • 2 cups spinach or chili leaves
  • Salt and pepper to taste

Steps

  1. Step 1. Cook the onion, ginger, and garlic in the oil for 3 minutes until fragrant.

  2. Step 2. Add the chicken and cook for 5 minutes. Pour in the fish sauce and water.

  3. Step 3. Simmer for 25 minutes, until the chicken is cooked through (165°F).

  4. Step 4. Add the papaya and cook for 8 minutes until tender. Stir in the greens for 1 minute. Season and serve.
