Ginisang Monggo

A savory mung bean stew with garlic, tomato, and spinach. A Friday staple.

Ingredients

  • 1 cup dried mung beans, rinsed
  • 5 cups water
  • 2 tablespoons oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 1/4 lb pork, diced small, optional
  • 2 tablespoons fish sauce
  • 1 teaspoon salt
  • 2 cups spinach or malunggay leaves
  • Fried garlic, to serve

Steps

  1. Step 1. Boil the mung beans in the water for 35 to 40 minutes, until very soft and starting to break down.

  2. Step 2. Meanwhile cook the pork in the oil for 6 minutes until browned and cooked through. Add the onion, garlic, and tomatoes for 4 minutes.

  3. Step 3. Stir the sautéed mix into the beans with the fish sauce and salt. Simmer for 8 minutes.

  4. Step 4. Add the spinach for 1 minute. Top with fried garlic and serve with rice.
