Spinach Ohitashi

ほうれん草のおひたし

Blanched spinach chilled in a light dashi and soy sauce and topped with bonito flakes.

Ingredients

  • 1 lb spinach, washed
  • 1/2 cup dashi stock
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon bonito flakes
  • 1 teaspoon toasted sesame seeds

Steps

  1. Step 1. Boil the spinach for 30 seconds. Move to ice water, then squeeze out the water and cut in 2-inch pieces.

  2. Step 2. Mix the dashi, soy sauce, and mirin.

  3. Step 3. Soak the spinach in the sauce for 10 minutes.

  4. Step 4. Serve topped with bonito flakes and sesame seeds.
