Cucumber Sunomono

A light, tangy cucumber salad with rice vinegar and sesame.

Ingredients

  • 2 Japanese or small cucumbers, sliced very thin
  • 1 teaspoon salt
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon soy sauce
  • 1 tablespoon dried wakame, soaked and drained, optional
  • 1 teaspoon toasted sesame seeds

Steps

  1. Step 1. Toss the cucumber with the salt and let it sit for 10 minutes. Squeeze out the water.

  2. Step 2. Stir the vinegar, sugar, and soy sauce until the sugar dissolves.

  3. Step 3. Mix the cucumber and wakame with the dressing.

  4. Step 4. Top with sesame seeds and chill until serving.
