Tom Rim (Caramelized Shrimp)

Shrimp cooked in a sticky, sweet and salty caramel with black pepper. Great with plain rice.

Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons sugar
- 1 tablespoon vegetable oil
- 3 cloves garlic, minced
- 2 shallots, minced
- 2 tablespoons fish sauce
- 1 teaspoon black pepper
- 2 green onions, sliced
Steps
Step 1. Cook the sugar in a dry pan over medium heat, stirring gently, until it melts to amber, about 3 minutes.
Step 2. Add the oil, garlic, and shallots and stir for 30 seconds.
Step 3. Add the shrimp and fish sauce and cook for 4 to 5 minutes, until the shrimp are pink and opaque and glazed in a thick sauce.
Step 4. Add the pepper and green onions. Serve with rice.
