Ingredients

  • 1.5 lb catfish or salmon steaks
  • 3 tablespoons sugar
  • 2 tablespoons water
  • 1/4 cup fish sauce
  • 3 cloves garlic, minced
  • 2 shallots, minced
  • 1 cup coconut water or water
  • 1 teaspoon black pepper
  • 2 red chilies, sliced
  • 2 green onions, sliced

Steps

  1. Step 1. Cook the sugar and water in a clay pot or heavy pan until it turns deep amber, about 5 minutes.

  2. Step 2. Add the garlic and shallots for 30 seconds. Carefully add the fish sauce and coconut water.

  3. Step 3. Lay in the fish and spoon the sauce over it. Simmer, covered, for 15 minutes.

  4. Step 4. Uncover and simmer 8 to 10 minutes until the sauce thickens and the fish flakes easily. Add the pepper, chilies, and green onions. Serve with rice.
