Wonton Soup

Delicate pork and shrimp wontons in a light ginger and green onion broth.

Ingredients

  • 1/2 lb ground pork
  • 1/4 lb shrimp, peeled and finely chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 24 wonton wrappers
  • 6 cups chicken stock
  • 1 slice ginger
  • 2 cups baby bok choy leaves
  • 2 green onions, sliced
  • 1/4 teaspoon white pepper

Steps

  1. Step 1. Mix the pork, shrimp, soy sauce, grated ginger, sesame oil, and salt until sticky.

  2. Step 2. Put a teaspoon of filling in the center of a wrapper. Wet the edges, fold into a triangle, then pinch the two corners together. Repeat.

  3. Step 3. Simmer the stock with the ginger slice for 5 minutes.

  4. Step 4. Boil the wontons in a separate pot of water for 4 to 5 minutes, until they float and the pork is cooked through. Lift out with a slotted spoon.

  5. Step 5. Add the bok choy to the stock for 1 minute. Divide the wontons into bowls, ladle over the broth, and top with green onion and pepper.
