Beef Tapa

Thin beef strips cured in soy sauce, garlic, and sugar, then pan-fried. Serve as tapsilog with egg and garlic rice.

Ingredients

  • 1.5 lb beef sirloin, sliced thin
  • 1/3 cup soy sauce
  • 3 tablespoons calamansi or lemon juice
  • 2 tablespoons brown sugar
  • 5 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 2 tablespoons oil
  • 4 fried eggs, to serve
  • Garlic fried rice, to serve

Steps

  1. Step 1. Mix the soy sauce, calamansi, sugar, garlic, and pepper. Marinate the beef for at least 4 hours, or overnight in the fridge.

  2. Step 2. Heat the oil in a wide pan over medium-high heat.

  3. Step 3. Fry the beef in batches for 2 to 3 minutes per side, until browned, cooked through, and a little caramelized.

  4. Step 4. Serve with fried eggs, garlic rice, and vinegar for dipping.
