Cherry Clafoutis

A rustic baked custard, somewhere between a pancake and a flan, filled with cherries.

Ingredients

  • 1 lb cherries, pitted
  • 3 eggs
  • 1/2 cup sugar
  • 1 cup milk
  • 1/2 cup heavy cream
  • 3/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon butter, for the dish
  • Powdered sugar, to dust

Steps

  1. Step 1. Heat the oven to 375°F and butter a 9-inch baking dish. Spread the cherries in it.

  2. Step 2. Whisk the eggs and sugar, then the milk, cream, flour, vanilla, and salt until smooth.

  3. Step 3. Pour the batter over the cherries.

  4. Step 4. Bake for 35 to 40 minutes until puffed and golden and the center is set. Dust with powdered sugar and serve warm.
