Gougères

Light, cheesy choux puffs. A Burgundy appetizer to serve with wine.

Ingredients

  • 1 cup water
  • 6 tablespoons butter
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 4 eggs
  • 1 1/2 cups grated Gruyère, divided
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon nutmeg

Steps

  1. Step 1. Heat the oven to 425°F. Bring the water, butter, and salt to a boil. Add the flour all at once and stir for 2 minutes until the dough pulls away from the pan.

  2. Step 2. Cool for 3 minutes. Beat in the eggs one at a time until glossy.

  3. Step 3. Stir in 1 cup of cheese, the pepper, and nutmeg.

  4. Step 4. Pipe or spoon 1-inch mounds onto lined sheets and top with the remaining cheese.

  5. Step 5. Bake for 10 minutes, lower the heat to 375°F, and bake 15 to 20 minutes more until puffed and golden. Serve warm.
