Tarte Tatin

An upside-down apple tart with deeply caramelized apples under a buttery pastry.

Ingredients

  • 6 apples, peeled, cored, and quartered
  • 1/2 cup sugar
  • 4 tablespoons butter
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1 sheet puff pastry, thawed
  • Crème fraîche or ice cream, to serve

Steps

  1. Step 1. Heat the oven to 400°F. Melt the sugar and butter in a 10-inch oven-safe skillet over medium heat until amber, about 6 minutes.

  2. Step 2. Take off the heat. Arrange the apples tightly, rounded side down, in the caramel. Add the lemon juice and salt.

  3. Step 3. Cook over medium heat for 10 minutes until the apples start to soften.

  4. Step 4. Lay the pastry over the apples and tuck the edges inside. Cut a few slits.

  5. Step 5. Bake for 25 to 30 minutes until puffed and golden. Rest 5 minutes, then flip onto a plate. Serve warm.
