Arroz Doce

Brazilian rice pudding simmered in milk and coconut with cinnamon and cloves.

Ingredients

  • 1 cup short-grain white rice
  • 2 cups water
  • 2 cinnamon sticks
  • 3 cloves
  • 3 cups whole milk
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup coconut milk
  • 1 pinch salt
  • Ground cinnamon, to serve

Steps

  1. Step 1. Simmer the rice, water, cinnamon, and cloves for 12 minutes until the water is absorbed.

  2. Step 2. Add the milk and cook over medium heat for 15 minutes, stirring often.

  3. Step 3. Stir in the condensed milk, coconut milk, and salt and cook 8 minutes until creamy.

  4. Step 4. Remove the spices and serve warm or cold with cinnamon on top.
