Pinakbet

A northern Filipino vegetable stew of squash, eggplant, okra, and long beans with shrimp paste.

Ingredients

  • 1/4 lb pork belly, diced small
  • 2 tablespoons oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tomatoes, chopped
  • 2 tablespoons bagoong (shrimp paste) or fish sauce
  • 1 cup squash, cubed
  • 1 eggplant, sliced
  • 1 cup long beans, cut in 3-inch pieces
  • 6 okra, trimmed
  • 1/2 cup water

Steps

  1. Step 1. Cook the pork in the oil for 8 minutes until browned and cooked through. Add the onion, garlic, and tomatoes for 3 minutes.

  2. Step 2. Stir in the bagoong and water.

  3. Step 3. Add the squash first and cook 5 minutes, then the long beans, eggplant, and okra.

  4. Step 4. Cover and simmer for 8 to 10 minutes until just tender. Do not stir too much. Serve with rice.
