Madeleines

Small, shell-shaped sponge cakes with a golden edge and a little bump on the back.

Ingredients

  • 2 eggs
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, melted and cooled
  • Powdered sugar, to dust

Steps

  1. Step 1. Beat the eggs, sugar, vanilla, and zest for 5 minutes until pale and thick.

  2. Step 2. Fold in the flour, baking powder, and salt, then the butter. Chill the batter for at least 1 hour.

  3. Step 3. Heat the oven to 375°F and butter and flour a madeleine pan.

  4. Step 4. Fill each shell 3/4 full. Bake for 10 to 12 minutes until golden at the edges with a bump in the middle. Release at once and dust with powdered sugar.
