Ensaladang Mangga

A tart, crunchy salad of green mango, tomato, and onion with a salty-sweet bagoong dressing.

Ingredients

  • 2 green mangoes, peeled and cut in matchsticks
  • 2 tomatoes, diced
  • 1 red onion, thinly sliced
  • 2 tablespoons bagoong (shrimp paste) or fish sauce
  • 1 tablespoon sugar
  • 1 tablespoon vinegar
  • 1 red chili, sliced, optional

Steps

  1. Step 1. Mix the mangoes, tomatoes, and onion in a bowl.

  2. Step 2. Whisk the bagoong, sugar, and vinegar until the sugar dissolves.

  3. Step 3. Toss with the salad and add the chili.

  4. Step 4. Serve with grilled fish or fried pork.
