Smashed Cucumber Salad

Cucumbers smashed into craggy pieces that hold on to a garlicky, tangy dressing.

Ingredients
- 4 small cucumbers
- 1 teaspoon salt
- 3 cloves garlic, minced
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1 tablespoon sesame oil
- 1 teaspoon chili oil, optional
- 1 tablespoon chopped cilantro
Steps
Step 1. Lay the cucumbers on a board and smack each with the flat of a knife until it splits. Tear or cut into bite-size pieces.
Step 2. Toss with the salt and let drain in a colander for 10 minutes. Shake off the extra liquid.
Step 3. Mix the garlic, vinegar, soy sauce, sugar, sesame oil, and chili oil.
Step 4. Toss the cucumbers with the dressing and cilantro. Serve cold.
