Huevos Rancheros

Fried eggs on crisp tortillas with warm refried beans and a smoky tomato chile sauce.

Ingredients

  • 4 corn tortillas
  • 2 tablespoons vegetable oil, plus more for the eggs
  • 1 cup refried beans, warmed
  • 8 eggs
  • 1.5 cups salsa roja or ranchero sauce, warmed
  • 1/2 cup crumbled queso fresco
  • 1 avocado, sliced
  • 2 tablespoons chopped cilantro

Steps

  1. Step 1. Fry the tortillas in the 2 tablespoons of oil for 30 seconds per side, until crisp. Drain on paper towels.

  2. Step 2. Fry the eggs in a little oil over medium heat until the whites are set and the yolks are as runny as you like.

  3. Step 3. Spread each tortilla with beans and set two eggs on top.

  4. Step 4. Spoon over the warm salsa and top with cheese, avocado, and cilantro.
