Salmon en Papillote

Salmon baked in a parchment packet with lemon, herbs, and vegetables. Easy cleanup.

Ingredients

  • 4 salmon fillets, 6 oz each
  • 1 zucchini, sliced thin
  • 1 carrot, cut in thin matchsticks
  • 1 leek, sliced thin
  • 4 tablespoons butter, divided
  • 1 lemon, sliced
  • 4 sprigs dill or thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons white wine

Steps

  1. Step 1. Heat the oven to 400°F. Cut four sheets of parchment, each 15 inches.

  2. Step 2. Divide the vegetables among the sheets. Top each with a fillet, a pat of butter, lemon slices, and herbs. Season.

  3. Step 3. Add 1 tablespoon of wine to each and fold the parchment over, crimping the edges to seal tightly.

  4. Step 4. Bake on a sheet pan for 12 to 15 minutes, until the salmon is opaque and flakes easily (145°F). Open at the table.
