Pork and green beans stir-fried in a dry, spicy red curry paste with makrut lime leaves.

Ingredients

  • 1 lb ground or thinly sliced pork
  • 2 tablespoons vegetable oil
  • 3 tablespoons red curry paste
  • 1 lb green beans, cut in 2-inch pieces
  • 3 makrut lime leaves, sliced very thin
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar or brown sugar
  • 1/4 cup water

Steps

  1. Step 1. Heat the oil in a wok over medium-high heat. Fry the curry paste for 1 minute.

  2. Step 2. Add the pork and stir-fry for 4 minutes, until no longer pink.

  3. Step 3. Add the green beans, fish sauce, sugar, and water. Stir-fry for 5 minutes, until the beans are tender-crisp and the pork is cooked through.

  4. Step 4. Stir in the lime leaves. Serve with rice.
