Pão de Queijo

Chewy, cheesy little bread puffs made with tapioca flour. Naturally gluten-free.

Ingredients

  • 1 cup milk
  • 1/2 cup oil
  • 1 teaspoon salt
  • 2 cups tapioca flour (sour or sweet)
  • 2 eggs
  • 1 1/2 cups grated Parmesan or Minas cheese

Steps

  1. Step 1. Heat the oven to 400°F. Bring the milk, oil, and salt to a boil in a pot.

  2. Step 2. Pour over the tapioca flour in a bowl and stir until it forms a shaggy dough. Cool for 10 minutes.

  3. Step 3. Mix in the eggs one at a time, then the cheese, until a sticky dough forms.

  4. Step 4. Roll into 24 balls the size of a golf ball and set on a baking sheet.

  5. Step 5. Bake for 20 to 25 minutes until puffed and light golden. Eat warm.
