Pork Adobo

Pork belly or shoulder simmered in vinegar and soy sauce with garlic and pepper.

Ingredients

  • 2 lb pork belly or shoulder, cut in 2-inch pieces
  • 1/3 cup soy sauce
  • 1/3 cup vinegar
  • 8 cloves garlic, crushed
  • 3 bay leaves
  • 1 teaspoon black peppercorns
  • 1 1/2 cups water
  • 1 tablespoon brown sugar

Steps

  1. Step 1. Put the pork, soy sauce, vinegar, garlic, bay leaves, peppercorns, and water in a pot. Bring to a boil.

  2. Step 2. Lower to a simmer, cover, and cook for 50 to 60 minutes, until the pork is tender and cooked through.

  3. Step 3. Uncover and simmer another 10 to 15 minutes until the sauce thickens. Add the sugar.

  4. Step 4. Let the pork fry in its own fat at the end for a few minutes for browned edges. Serve with rice.
