Ingredients

  • 6 saba or 3 ripe plantains, halved lengthwise
  • 1/2 cup brown sugar, divided
  • 12 spring roll wrappers
  • 1/2 cup jackfruit strips, optional
  • 3 cups oil for frying
  • 1 tablespoon water

Steps

  1. Step 1. Roll each banana piece in the brown sugar. Place on a wrapper with jackfruit and a sprinkle of sugar.

  2. Step 2. Fold the sides in, roll up tightly, and seal with water.

  3. Step 3. Heat the oil to 350°F. Fry the rolls for 3 to 4 minutes until golden.

  4. Step 4. Sprinkle the remaining sugar into the oil for the last minute so it caramelizes onto the rolls. Lift out and cool on a rack.
