Pudim de Leite

A dense, silky caramel flan made with condensed milk. Brazil's favorite dessert.

Ingredients

  • 1 cup sugar
  • 1/4 cup water
  • 1 can (14 oz) sweetened condensed milk
  • 2 cups whole milk
  • 4 eggs
  • 1 teaspoon vanilla extract

Steps

  1. Step 1. Heat the oven to 350°F. Cook the sugar and water in a pan until amber. Pour into a 9-inch ring or loaf pan and tilt to coat.

  2. Step 2. Blend the condensed milk, milk, eggs, and vanilla for 1 minute. Strain into the pan.

  3. Step 3. Cover with foil and set in a roasting pan with hot water halfway up the sides.

  4. Step 4. Bake for 55 to 60 minutes until set with a gentle wobble (170°F). Cool, then chill overnight.

  5. Step 5. Run a knife around the edges and flip onto a plate.
