Caribbean Banana Bread

A moist banana bread with rum-soaked raisins, nutmeg, and coconut.

Ingredients

  • 3 very ripe bananas, mashed
  • 1/2 cup butter, melted
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 cup shredded coconut
  • 1/2 cup raisins

Steps

  1. Step 1. Heat the oven to 350°F and grease a loaf pan.

  2. Step 2. Whisk the bananas, butter, sugar, eggs, and vanilla.

  3. Step 3. Fold in the flour, baking soda, salt, nutmeg, coconut, and raisins until just combined.

  4. Step 4. Pour into the pan and bake for 55 to 60 minutes until a toothpick comes out clean. Cool 15 minutes.
